INGREDIENTS

Peanut sauce
  • 2½ tbsps Peanut butter
  • 1 tbsp Soy sauce
  • ½ tbsp Lime juice
  • ½ tbsp Honey
  • 1 Garlic clove, chopped
  • ½ tsp Ginger puree
  • 1½ tbsps Water
  • 2 Nests of noodle
  • 1 Pack of stir fry veg
  • 1 Pack of cooked chicken, shredded up
  • 3 Spring onions, chopped
  • 1 tbsp Chopped peanuts

Thai chicken noodle salad with peanut dressing

This lunch takes no longer than 10minutes and its packs a punch in terms of flavour!

1) Firstly, get your noodles on to boil, for around 3 mins until soft.

2) Meanwhile, add all of the sauce ingredients into a bowl and whisk until smooth - if the sauce is too thick add in some noodle water.

3) Then, fry off your stir fry veg for 2 mins before adding in the shredded chicken, then then noodles and then the sauce. Toss together in a pan until everything is coated.

4) To serve, top with some chopped spring onions and peanuts.
