  • 1 Onion, diced
  • 40 g Butter
  • 100 g Fresh cranberries
  • 140 g Chestnuts, sliced
  • 700 g Pork sausage meat
  • 150 g Fresh breadcrumbs
  • 1 Bunch of fresh parsley, chopped
  • 1 Bunch of fresh sage, chopped

These festive stuffing balls provide the perfect accompaniment to your christmas dinner.

  1. Gently fry the diced onion in the butter over e medium heat in a large frying pan. Cook for 5-6 minutes or until softened.
  2. Add the chopped chestnuts and cranberries to the pan and fry for a few minutes until the cranberries skins start to blister.
  3. In a large mixing bowl, add the fresh breadcrumbs, sausage meat and herbs. Then add the onion, cranberry and chestnut mix.
  4. Mix well until it's well combined. Use your hands if you need to.
  5. Shape the mixture into 24-30 equally sized balls.
  6. Preheat the oven to 200℃ 
  7. Heat some oil in a large frying pan over a medium-high heat. Add the stuffing balls and fry for 2-3 minutes until they are golden on both sides.
  8. Place the balls into a baking tray, and then into the oven for 20 minutes until they are cooked through. If they brown too quickly during cooking, cover with tin foil.
  9. Serve alongside your roast dinner.
