Thai Chicken Noodle Broth

The glorious result of a food craving! This noodle broth will leave your lips tingly and your stomach happy!

  • Heat the Sesame Oil to a medium heat in a wok then fry off the Shallot, Garlic & Ginger until softened.
  • Add in the Chicken, Courgette & Curry Paste and fry until the Chicken has changed colour all over and sealed (around 3-5 minutes).
  • Pop in the Coconut Milk & Stock and bring to the boil then add the Pak Choi, put the lid on the pan and steam for around 5 minutes until the Pak Choi is cooked through.
  • Remove the Pak Choi from the broth and season the broth with the Lime Juice and some pepper then add the Noodles and cook for a further 3-5 mins on a high heat.
  • Serve the Noodles into a deep bowl with a good amount of the broth, top with the Pak Choi, fresh Lime & Sesame Seeds.
