Biscoff S’mores Protein Brownies

Ingredients checklist
  1. Preheat oven to 180℃ and line a baking pan with baking paper. (I used a 20 cm x 20 cm baking tray).
  2. Melt choc spread in a microwave safe bowl and set aside for a couple of minutes to cool before adding the Greek yoghurt and mixing to combine. Be sure to let the choc spread cool a bit otherwise your yoghurt will curdle when you add it!
  3. In a separate bowl, sieve in your flour, protein, cocoa powder, sweetener and bi carb soda, then whisk to combine.
  4. Once your dry mixture is combined, add the yoghurt mixture and the almond milk and mix to create your brownie batter.
  5. Pour half the mixture into your brownie tray and top with Biscoff and Marshmallow Fluff, pour remaining batter on top then place in the oven for 25-30 minutes. When you remove them, you’ll want them to be slightly undercooked as they’ll continue to cook in the pan while they’re cooling.
  6. Slice into 12 and smash 8 of them down before you’ve even realised what has happened because you have no self control with brownies.
