Ingredients
Filling:
  • 1 Cup chopped Turkey
  • 1 Cup mashed potatoes (or any potato dish)
  • ½ Cup stuffing
  • ½ Cup sautéed spinach
  • ½ Cup shredded white cheddar cheese
  • 1 tbsp chopped fresh parsley
  • 5 crushed ritz crackers
  • 1 beaten egg
For coating:
  • 2 beaten eggs
  • 1 tbsp water
  • ½ Cup Italian breadcrumbs
  • ½ Cup panko breadcrumbs
  • 1½ Cups seasoned all purpose flour
For frying:
  • 2 Cups vegetable oil

Thanksgiving Croquettes

Prep 20 minutes
Total 50 minutes
  1. In a bowl, combine all ingredients together and mix. 
  2. Cover the bowl with cling wrap and refrigerate for 20 minutes.
  3. Uncover and using a small melon baller, form the mixture into balls. 
  4. Toss the balls into the flour, then egg, then breadcrumbs, back into the egg and in the breadcrumbs again. 
  5. Cover again and refrigerate for 10 minutes.
  6. Pre-heat 2 Cups of a high smoke point oil (vegetable oil for instance) to 350℉.
  7. Fry each croquette for about 3 minutes or until crispy and warmed through. 
  8. Drain on paper towels and sprinkle with salt. 
  9. Serve with hot gravy. Eat Up!
