  • 150 g Dried Medium Noodles
  • 2 Salmon Fillets (120g Each)
  • 1 Small Red Chilli (Sliced)
  • 1 Garlic Clove (Sliced)
  • 2 tsps Olive Oil

  • 2 tbsps Sweet Chilli Sauce
  • Fresh Coriander (Optional)
  • Fresh Lime Wedges (Optional)
  • Sesame Seeds (Optional)

Speedy Salmon Noodles

In a hurry? Don't worry this dish is cooking 101 so anyone can do this. Can even be made the day before for lunch to take with you to work tomorrow

  1. Grab a non stick frying pan and put over medium/high heat and add the olive oil, season the salmon fillets with salt and pepper. Place the fillets in the pan skin side down and cook for 3-4mins until skin becomes crispy.
  2. In a medium pan, fill half way with boiling water and place over a high heat, add a pinch of salt and put the lid on and bring to a boil. Add the egg noodles and cook for 6-8mins. Once cooked, drain and drizzle the sesame oil over then and toss together back in the same pan. Set aside.
  3. Once the salmon skin has become crispy then turn over and cook for 3mins on the flesh side, after 3mins turn again and begin to brush the top of the salmon fillets with the sweet chilli sauce and cook for a further 2 mins. Remove and set aside.
  4. In the same salmon pan add the remaining olive oil, the chilli and garlic and cook for 1 min until fragrant, add the noodles to the bowl and toss together, squeeze in some lime slices in and give it a final toss. Check for seasoning and adjust if needed.
  5. Plate up the noodles and place the salmon fillet on top, garnish with coriander and sesame seeds if you prefer, enjoy.
