  • 1 Celery (Sliced)
  • 1 Large Carrot (Diced)
  • Fresh Flat Leaf Parsley (Chopped)

Chicken & Vegetable Soup

Lovely, healthy, wholesome and worth the little amount of effort it takes

Total 2 hours
  1. Grab a large stock pot and place the chicken in, the stock pots, add the onions, carrots, salt and pepper and chilli. Fill up the pot with water so it's an inch above the chicken and place over medium heat, boil for 1 hour. Remove the scum that starts floating to the top of the water with a single sieve or with a spoon.
  2. After 1 hour, take off the heat and drain the liquid through a sieve into another pot and set aside, leave the chicken to the side to cool for 30mins. Once cooled begin to take the meat from the bones and discard of the bones.
  3. Place the pot back on the hob over medium heat and add the carrots, potatoes and celery. Boil the vegetables for 15-20mins until soft, then for the final 15mins add the chicken meat to the pan and cook through. Finally add the fresh parsley 2mins before serving and stir through. Season to taste with salt and pepper and serve up. Enjoy
