  • 4 Large salmon fillets
  • 1 Bunch of fresh oregano
  • 1 Bunch of fresh basil
  • 1 Bunch of fresh rosemary
  • 2 tbsps Olive oil
  • 5 Garlic cloves, crushed
  • 2 Lemons
  • 300 g Chestnut mushrooms
  • 300 g Cherry tomatoes
  • 2 Large courgette
  • 3 Mixed peppers
One Pan Lemon + Herb Salmon with Veggies

For a quick and easy mid week dinner try out this simple yet healthy dish.

  1. Preheat the oven to 200℃ 
  2. Finely chop the herbs and place them into a mixing bowl. Add the zest and juice of the lemons, the crushed garlic cloves and a glug of olive oil. Mix well.
  3. Coat the Salmon fillets in the herby marinade and set aside whilst you get the vegetables ready.
  4. Cut the chestnut mushrooms into halves. Cut the cherry tomatoes into halves. Slice the peppers into cm thick slices. Chop the courgette into chunks.
  5. Toss the chopped vegetables with some olive oil and seasoning.
  6. Place the veggies onto a large baking tray and place the marinated salmon fillets on top.
  7. Bake in the oven for 20 minutes, the salmon will be cooked and the tomatoes will be bursting.
  8. Serve, and enjoy!
