300 g Tortellini (This Recipe Has Cheese & Ham)

400 g Chopped Tomatoes

1 Large Onion (Diced)

1 Celery (Diced)

½ Fennel Bulb (Diced)

50 g Kale (Chopped)

1 Garlic Clove (Diced)

1 Red Chilli (Diced)

700 ml Vegetable Stock
-
1 tbsp Olive Oil
-
Basil Pesto
-
Crusty Bread
-
Salt & Pepper


Tomato & Tortellini Soup

- In a large stock pot over medium heat, add the oil, onions, celery, fennel and chilli and begin to fry for 5-6mins, now add the garlic and fry for a further 2mins.
- Empty the tomatoes and stock into the pot and stir, bring to the boil then put the lid on and turn heat to a simmer for 10mins.
- After 10mins taste the soup and check for seasoning, adjust if needed.
- Now add the tortellini and kale and cook for 5mins until pasta is cooked.
- Once pasta is soft then begin to serve up into bowls, adding drops of pesto to each bowl for extra flavour. If using bread then dip or mop up the lovely tomato juices up at the end. Enjoy
