  • 3 Vine Tomatoes
  • 100 g Plum tomatoes
  • 3 tbsps Extra virgin olive oil
  • 2 tbsps Fresh basil, finely sliced
  • ½ Red onion, finely diced
  • 1 Garlic clove
  • Toasted sourdough bread

Tomato bruschetta

  1. Chop and add your tomatoes, onion and basil in a large bowl. Add your oil plus salt and pepper mix gently and leave to marinate in the fridge for at least 15 minutes (for best results marinate for 2 hours).
  2. Rub your toasted sourdough with garlic and top with your bruschetta mix. Serve and enjoy.
